How is February almost over? I really don’t know but time is flying fast! February has been a really weird month for me. I’ve been all over the place health wise as well as mood. I burned myself pretty badly making food. So obviously, my favorite product has been Sibu Sea Buckthorn Oil I just talked about this week. I’ve had a few other favorites that aren’t beauty related I swear!
Seems silly but (if I have the money) when I’m in the doldrums a bunch of fresh blooms will cheer me up quite a bit. I’ve had Snapdragons and Tulips this month.
I’ve been having a real problem staying properly hydrated lately. I’m not sure why. I’m a fan of coconut water but sometimes it just tastes off to me. This isn’t too bad on sugars so I tried it. I like it quite a bit!
Trader Joe’s 100% Pure Coconut Water
This is the only coconut water that always tastes great to me or I can handle even on an upset stomach. It’s a little pricey at $2 a bottle but occasionally it’s needed to keep me going. I used to go to a Thai restaurant with family and friends when I was younger and they had a drink just like this one. I would always drink two or three per meal and feel so much better for days! I feel the same way with this one. My only problem is my pets love this too and if I have one, they will both be on me like ants on a jelly sandwich until they get some.
Natures Path Flax Plus Maple Pecan Crunch
I used to be a big breakfast person until I found out I was allergic to quite a few things and started to have to take medication for my thyroid on an empty stomach (waiting an hour to eat to boot). I went from hearty breakfast eater to a cup of coffee or tea before noon type of person. I’m trying to spread my calories out better. I will be starving by lunchtime and by dinner I’m in the same boat. I end up overeating slightly at both meals (still within my calories usually) but it’s a bit much for my system to process at one time. I’ve tried doing protein bars but they usually only have about 200 cals and I’m blenderless at the moment so no smoothies either. I’m finding cereal and almond milk is keeping me from being totally ravenous for the rest of the day. It’s more sugar and carbs than I care to have outside of desert or pasta night but I’m finding the about 400 calories in the morning are much more healthy feeling. I’m not sure how it will shake out or if I’ll keep doing it but it’s working for now. Speaking of carbs…
Toasted Panko Breadcrumbs
Since my husband has been gone, I’m trying some stuff I know he’d hate and this was a component of the dish I was making. The dish is a riff on the springtime favorite in Italy of an artichoke with butter/EVOO, garlic, and toasted breadcrumbs. Sometimes it’s stuffed and sometimes it’s fried first. I didn’t want to bother with them whole so I just got frozen ones and added them to pasta and topped it with Panko. I toasted the panko on the stovetop in a small frying pan with garlic oil, garlic powder, salt, and pepper. OMG, they are so good. Like stupid good. I can say in the long run if you are a bread lover, this will squash your bread craving in one or two spoonfulls. All the crunch and flavor with waaay fewer calories and carbs. It makes pasta so fun to eat though you may eat more than intended!
