Yup, I’m back on the box. Even though I love red wine, I don’t drink a lot of it when it gets hot out because I often find it too heavy. These last few days have been summer temps in April and I wanted to just have a little bit with some burgers I was making. I picked up the Postulate 2014 Cabernet Sauvignon based on the mild success of the Sauv Blanc I reviewed a few weeks back. I considered picking up the Merlot instead but the wine steward’s note included caramel in the notes which made it sound sweeter than I would care for. A Pinot Noir would have been perfect but they didn’t seem to have one.
The Postulate 2014 Cabernet Sauvignon comes in at 13% ABV which is perfect for weeknight drinking if you ask me. I have no aging info except it saw it few months in oak. I chilled the wine to 65 degrees and tasted it with a stemless red wine glass. I forgot to aerate the wine, as dinner was cooked later than I expected and I was harried. I’d recommend a little Vinturi action. The wine had no scent as it was poured that I could detect. The color is an exceptionally blackened purple.
Postulate 2014 Cabernet Sauvignon has a mild nose that certainly benefited from a vigorous swirl. After about 4 of those, I started to get more aroma. The nose had a lot of black and red fruit, vanilla, oak, and a hint of an earthy note. It tasted rather identical with hints of prunes and tobacco. As the wine opened up about 10 minutes later, I got some spice that complimented the food nicely. My only problem is the utter lack of tannins and it was a little flabby. The finish was longer than I expected for the lack of tannin and acid and it had notes of coffee and oak. I went back to the box a few times trying it at different chillings, aeration, and pour sizes throughout the rest of the evening and drank more than I should. It tastes best chilled slightly below 65 degrees, aerated, and with small pours. I also prefer it alone as a backyard sipping wine than something to match with food due to the lack of acid.
To sum up, it’s not great but it’s not bad either. I enjoyed it but I won’t pair it with savory foods. Dessert or by itself is how I’ll finish the box. I give this 84 points.
